● Plans and directs all Food and Beverage operations for the casino.
Develops and maintains F&B programs to improve operational performance, increase revenue and satisfy customers.


● Develops F&B programs to meet company goals.
● Establishes and maintains F&B programs in compliance with safety and employment laws and the Colorado Limited Gaming Act.
● Directs, manages and develops an effective staff by: hiring, training, scheduling, rewarding and disciplining staff. Develops staff to meet and exceed performance expectations by establishing and maintaining a positive work morale and effective employee relations.
● Implements F&B policies and procedures and acts to ensure that all employees are informed.
● Manages and controls the F&B budget and takes actions, as necessary, to achieve a profit or to manage operations within budgetary requirements.
● Provides guidance regarding various F&B issues, goals and objectives.
● Negotiates with and selects vendors for procurement of food and beverage. Maintains professional contacts with other companies and industry professionals regarding F&B issues.
● Monitors F&B operations, conducts profit and loss analysis and promptly makes changes, when necessary, to enhance the performance of casino operations.
● Directs the monthly inventory reconciliation of all food and beverages. Directs staff in the development of various reports to measure and track F&B operations.
● Ensures for the quality, selection and variety of all food and beverages.
● Directs compliance with established security policies and procedures.
● Assists the marketing department in menu planning for catering functions and events, and/or special events.
● Develops food and beverage menus and concepts that can best attract gaming customers.
● Co-ordinates Food and Beverage operations with other departments.
● Performs other duties, including special projects, as needed and directed.

● Directly supervises the activities of the Food and Beverage team members.
● Mentor and develop the food and beverage department by: managing work allocation, training, problem resolution, performance evaluation and the building of an effective and efficient team dynamic.
● Plans growth opportunities for team members who display the necessary skills, motivation and attitude to progress within the company.
● Provides for the fair and equitable treatment of all team members.
● Responsible for maintaining a consistent, regular attendance record.
● Responsibilities include: interviewing, training team members, planning, assigning and directing work, appraising performance, rewarding and disciplining team members, addressing complaints and resolving problems.
● Perform reviews on team members, paperwork, authorize vacations, etc.
● Address any scheduling conflicts, payroll discrepancies, etc.


● Strong guest service skills with the ability to ask questions and apply deductive reasoning and listening skills are essential.

● High school graduate or equivalent; three-to-six month's related experience and/or training; or equivalent combination of education and experience.
● Minimum of 3 years casino operations.
● Minimum of 3 years casino gaming management/F&B management.

● Able to read, comprehend and interpret simple instructions, correspondence, memos and documents such as safety rules, operating manuals and procedures and maintenance instructions.
● Able to write routine simple correspondence.
● Able to effectively present information in one-on-one and small group situations to guests and employees.

● Able to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions and decimals.

● Able to apply common sense, patience and understanding while carrying out detailed written and/or oral instructions.
● Able to deal with and present problem-solving ideas that involve concrete variables in standardized situations.

● Colorado Gaming License is required.
● Must be able to obtain Colorado Gaming KEY License.
